Classic Red Pickled Beets

Ingredients

  • 2 pounds (900 g) fresh beets
  • 1 cup white vinegar
  • 1 cup water
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 4 whole cloves (optional)
  • 1 bay leaf (optional)
  • 1 small cinnamon stick (optional)
