Easy Dutch Oven Artisan Bread

This simple homemade bread has a crisp, golden crust and a soft, fluffy interior. With just a few pantry staples, you can bake bakery-style bread right at home.

Ingredients

  • 4¾ cups (570 g) all-purpose flour
  • 1 tablespoon (10 g) active dry yeast
  • 1 teaspoon salt
  • 1⅓ cups (320 ml) warm water (105–110°F / 40–43°C)
  • 4 tablespoons (60 ml) olive oil

Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine the warm water and yeast. Let it sit for 5–10 minutes until foamy.

Step 2: Make the Dough

Add the olive oil and salt, then gradually stir in the flour until a shaggy dough forms.

Step 3: Knead

Transfer the dough to a lightly floured surface and knead for 8–10 minutes, or until smooth and elastic. If using a stand mixer, knead with the dough hook for about 6 minutes.

Step 4: First Rise

Place the dough in a lightly oiled bowl, turning it once to coat. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 5: Shape the Loaf

Punch down the dough and gently shape it into a round loaf. Place it on a piece of parchment paper, cover, and let it rest for 30–45 minutes.

Step 6: Preheat the Dutch Oven

While the dough is resting, place a Dutch oven (with the lid on) into the oven and preheat to 450°F (230°C) for at least 30 minutes.

Step 7: Bake

Carefully remove the hot Dutch oven. Using the parchment paper, lower the dough into the pot. Score the top with a sharp knife or bread lame.

Cover with the lid and bake for 30 minutes.

Remove the lid and continue baking for 10–15 minutes, until the crust is deep golden brown and the loaf sounds hollow when tapped.

Step 8: Cool

Transfer the bread to a wire rack and allow it to cool for at least 30 minutes before slicing.

Tips

  • For extra flavor, add 1 teaspoon of garlic powder or Italian herbs to the dough.
  • Sprinkle the top with sesame seeds, oats, or everything bagel seasoning before baking.
  • Store in an airtight container or bread bag for up to 3 days, or freeze for up to 3 months.
  • For an even crispier crust, lightly mist the dough with water just before placing the lid on the Dutch oven.
