Yield

• 12 cupcakes

Ingredients

Vanilla Batter

• 150 g unsalted butter, softened

• 180 g granulated sugar

• 3 large eggs

• 1 tsp vanilla extract

• 220 g all-purpose flour

• 2 tsp baking powder

• 120 ml milk

Chocolate Batter

• Half of the vanilla batter

• 2 tbsp cocoa powder

• 1 tbsp milk

Instructions

1. Preheat the oven to 180°C (350°F). Line a 12-cup muffin tray with cupcake liners.

2. Beat the butter and sugar until light and fluffy.

3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

4. Sift together the flour and baking powder.

5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until smooth.

6. Divide the batter evenly between two bowls.

7. Leave one bowl plain for the vanilla batter.

8. Stir the cocoa powder and 1 tablespoon of milk into the second bowl to make the chocolate batter.

9. Spoon alternating dollops of vanilla and chocolate batter into each cupcake liner.

10. Use a skewer or toothpick to gently swirl the batters together to create a marble pattern.

11. Fill each cupcake liner about ¾ full.

12. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

13. Let the cupcakes cool completely before serving.

Notes

• Yield: 12 cupcakes.

• For a bold zebra-style pattern, pipe the vanilla and chocolate batters alternately into the center of each liner.

• Do not over-swirl. A few gentle strokes create the best marble effect.
