1. Cook the Pasta
Bring a large pot of salted water to a boil.
Add the tricolor rotini and cook according to the package directions until al dente.
Drain the pasta and rinse it briefly under cold water to stop the cooking process. Allow it to drain thoroughly and cool.
2. Prepare the Vegetables
While the pasta cools, wash and prepare the vegetables.
Dice the red bell pepper and red onion. Cut the cherry tomatoes in half.
If you’re adding olives, cucumbers, banana peppers, or other vegetables, chop them into bite-sized pieces as well.
3. Prepare the Meat and Cheese
Slice the pepperoni into smaller pieces.
Chop or tear the salami into bite-sized pieces.
Keep the cubed cheese ready. Cheddar, mozzarella, provolone, or a combination of cheeses all work beautifully.
4. Combine Everything
Place the cooled pasta in a large mixing bowl.
Add the red pepper, red onion, cherry tomatoes, pepperoni, salami, and cubed cheese.
Gently toss everything together so the ingredients are evenly distributed.
5. Add the Italian Dressing
Pour the zesty Italian dressing over the pasta mixture.
Start with about ¾ cup, toss everything together, and add more dressing as needed.
Season with salt and black pepper to taste.
6. Chill the Salad
Cover the bowl and refrigerate for at least 1 hour before serving.
For even better flavor, let it chill for several hours or overnight. The dressing will soak into the pasta and bring all the ingredients together.
7. Toss Before Serving
Remove the pasta salad from the refrigerator and give it a good toss.
If the pasta has absorbed too much dressing, add another small splash of Italian dressing and mix again.
Taste and adjust the seasoning if necessary.
8. Serve
Transfer the pasta salad to a large serving bowl and garnish with a little fresh parsley or Parmesan if desired.
Serve chilled as a side dish, lunch, or party appetizer. Feel free to measure with your heart and customize it with your favorite vegetables, olives, extra cheese, or pepperoncini to make it your own.
