Authentic Brazilian Brigadeiros

Step 1: Combine the Ingredients

  1. In a medium non-stick saucepan, combine the sweetened condensed milk, cocoa powder, and butter.
  2. Stir until the cocoa powder is completely dissolved.

Step 2: Cook the Mixture

  1. Place the saucepan over medium-low heat.
  2. Stir constantly with a silicone spatula or wooden spoon to prevent burning.
  3. Continue cooking for 10–15 minutes, until the mixture becomes thick and starts pulling away from the bottom and sides of the pan.

Step 3: Cool

  1. Transfer the mixture to a lightly buttered plate or bowl.
  2. Cover with plastic wrap, pressing it directly onto the surface.
  3. Refrigerate for 1–2 hours, or until completely cool.

Step 4: Shape the Brigadeiros

  1. Lightly butter your hands.
  2. Scoop about 1 tablespoon of the mixture and roll it into a smooth ball.

Step 5: Coat

  1. Roll each brigadeiro in the chocolate sprinkles until evenly coated.
  2. Place each one in a mini paper candy cup if desired.

Step 6: Serve

Arrange on a serving platter and enjoy at room temperature or slightly chilled.

Optional Variations

  • Coconut Brigadeiros: Roll in shredded coconut instead of sprinkles.
  • Nutty Brigadeiros: Coat with finely chopped toasted hazelnuts, almonds, or pistachios.
  • Dark Chocolate: Add 50 g (2 oz) melted dark chocolate for an extra-rich flavor.
  • White Brigadeiros (Branquinhos): Omit the cocoa powder and add 1 teaspoon vanilla extract.

Tips for Perfect Brigadeiros

  • Stir continuously while cooking to prevent sticking.
  • Cook until the mixture is thick enough to hold its shape when rolled.
  • Butter your hands lightly to make rolling easier.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
