Step 1: Activate the Yeast
- In a small bowl, combine the yeast with the sugar.
- Add 2 tablespoons of warm milk (if using) and let it sit for 5–10 minutes until slightly foamy.
Step 2: Mash the Banana
- Peel and mash the ripe banana until smooth with very few lumps.
Step 3: Make the Dough
- In a large bowl, combine the mashed banana, egg, vegetable oil, and the yeast mixture.
- Gradually add the flour and mix until a soft dough forms.

Step 4: Knead

Step 5: Let the Dough Rise
- Place the dough in a lightly greased bowl.
- Cover with a clean kitchen towel.
- Let it rise in a warm place for 45–60 minutes, or until doubled in size.
Step 6: Shape the Donut Bites
- Punch down the dough gently.
- Divide it into small equal pieces and roll each into a smooth ball, about 1 inch (2.5 cm) in diameter.
Step 7: Second Rise
- Arrange the dough balls on a parchment-lined tray.
- Cover lightly and let them rest for 20 minutes.
Step 8: Fry
- Heat about 2 inches of vegetable oil to 350°F (175°C).
- Fry the dough balls in small batches for 2–3 minutes, turning frequently until evenly golden brown.
- Remove with a slotted spoon and drain on paper towels.
Step 9: Finish
- While still slightly warm, dust generously with powdered sugar or roll them in cinnamon sugar.
Step 10: Serve
- Enjoy warm or at room temperature with coffee, tea, or a glass of milk.
