Banana Donut Bites

Step 1: Activate the Yeast

  • In a small bowl, combine the yeast with the sugar.
  • Add 2 tablespoons of warm milk (if using) and let it sit for 5–10 minutes until slightly foamy.

Step 2: Mash the Banana

  • Peel and mash the ripe banana until smooth with very few lumps.

Step 3: Make the Dough

  • In a large bowl, combine the mashed banana, egg, vegetable oil, and the yeast mixture.
  • Gradually add the flour and mix until a soft dough forms.
  • If the dough feels too dry, add a teaspoon or two of warm milk.
  • If it’s too sticky, sprinkle in a little more flour.

Step 4: Knead

  • Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic.

Step 5: Let the Dough Rise

  • Place the dough in a lightly greased bowl.
  • Cover with a clean kitchen towel.
  • Let it rise in a warm place for 45–60 minutes, or until doubled in size.

Step 6: Shape the Donut Bites

  • Punch down the dough gently.
  • Divide it into small equal pieces and roll each into a smooth ball, about 1 inch (2.5 cm) in diameter.

Step 7: Second Rise

  • Arrange the dough balls on a parchment-lined tray.
  • Cover lightly and let them rest for 20 minutes.

Step 8: Fry

  • Heat about 2 inches of vegetable oil to 350°F (175°C).
  • Fry the dough balls in small batches for 2–3 minutes, turning frequently until evenly golden brown.
  • Remove with a slotted spoon and drain on paper towels.

Step 9: Finish

  • While still slightly warm, dust generously with powdered sugar or roll them in cinnamon sugar.

Step 10: Serve

  • Enjoy warm or at room temperature with coffee, tea, or a glass of milk.

Tips

  • Use a very ripe banana for the sweetest flavor and softest texture.
  • Don’t overcrowd the pan while frying, as this lowers the oil temperature.
  • Fill the donut bites with chocolate spread, pastry cream, or fruit jam using a piping bag for a fun surprise.
  • Store in an airtight container at room temperature for 2 days or refrigerate for up to 5 days. Warm slightly before serving for the best texture.
