1. Prepare the jalapeños
Preheat your oven to 400°F (200°C).
Wash the jalapeños and slice them lengthwise.
Carefully remove the seeds and membranes. For less heat, remove all the white membranes.
2. Make the blueberry topping
Add the blueberries, honey, lemon juice, brown sugar, black pepper, and a tiny pinch of salt to a small saucepan.
Cook over medium heat for 5–7 minutes, stirring occasionally, until the berries soften and release their juices.
Lightly mash a few berries with the back of a spoon, leaving some whole.
Remove from the heat and let the mixture cool slightly.
3. Fill the jalapeños
Cut the Brie into small pieces.
Place a piece of Brie inside each jalapeño half.
Spoon a little of the warm blueberry mixture over the Brie.
4. Bake
Arrange the filled jalapeños on a parchment-lined baking sheet.
Lightly drizzle or brush them with olive oil.
Bake for 12–15 minutes, until the jalapeños are tender and the Brie is melted and bubbling.
5. Add the finishing touch
Remove from the oven and let them cool for a few minutes.
Spoon a little extra blueberry topping over each popper and sprinkle with chopped green onions.
6. Serve
Serve warm while the Brie is still creamy and melted.
