Step 1: Prepare the Dough
- In a large bowl, combine the flour, salt, sugar, and instant yeast.
- Add the warm milk and vegetable oil.
- Mix until a soft dough forms.
Step 2: Knead
- Knead the dough for 8–10 minutes until smooth and elastic.

Step 3: Prepare the Filling
- In a medium bowl, combine the mozzarella, feta (if using), green onions, parsley, oregano, and black pepper.
- Mix well.
Step 4: Divide the Dough
- Punch down the risen dough.
- Divide it into 8–10 equal pieces.
- Roll each piece into a ball.
Step 5: Fill the Flatbreads
- Flatten each dough ball into a small circle.
- Place 2–3 tablespoons of the cheese filling in the center.
- Fold the edges over the filling and pinch tightly to seal.
- Gently flatten into a thick round or oval shape.
Step 6: Cook
- Heat a lightly greased non-stick skillet over medium-low heat.
- Cook each flatbread for 4–5 minutes per side, until golden brown and cooked through.
- Brush with melted butter immediately after cooking for extra flavor.
Step 7: Serve
- Serve warm while the cheese is melted and gooey.
- Enjoy with plain yogurt, sour cream, garlic sauce, or your favorite dipping sauce.
Tips
- Add chopped spinach or sautéed mushrooms to the filling for extra flavor.
- For a spicy twist, mix in a pinch of crushed red pepper flakes or diced jalapeños.
- These flatbreads can also be baked at 375°F (190°C) for 18–20 minutes until golden brown.
- Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or oven for the best texture.
