Chocolate Peanut Clusters — Easy No-Flour Treat

1. Prepare the peanuts
Place the roasted peanuts in a large bowl. If they’re salted, you can reduce or skip the added salt.

2. Melt the chocolate
Add the chopped chocolate and coconut oil to a heatproof bowl. Melt gently over a double boiler, stirring until completely smooth. You can also microwave it in 20–30-second intervals, stirring between each interval.

3. Add the flavor
Stir in the vanilla extract and a tiny pinch of salt.

4. Combine
Pour the melted chocolate over the peanuts. Mix thoroughly until every peanut is coated.

5. Form the clusters
Line a baking tray with parchment paper. Spoon small portions of the mixture onto the tray, making little clusters.

6. Chill
Place the tray in the refrigerator for 30–60 minutes, or until the chocolate has completely hardened.

7. Serve
Once firm, gently remove the clusters from the parchment paper and serve.

💡 Tips

  • For extra crunch, lightly toast the peanuts before using them.
  • For a less-sweet version, use dark chocolate with a high cocoa percentage.
  • Store the clusters in an airtight container in the refrigerator for up to about 1 week.

Important: This is a treat rather than a “eat as much as you like” food—peanuts and chocolate can be quite calorie-dense, even when made without flour.
