Classic Biscuits & Sausage Gravy with Eggs and Crispy Bacon

🔥 1. Cook the Bacon

  1. Place bacon in a cold pan.
  2. Turn heat to medium and cook slowly.
  3. Flip occasionally until crispy.
  4. Remove and place on paper towels.

👉 Tip: Save 1–2 tbsp bacon grease for extra flavor if you like.

🫓 2. Make the Biscuits

  1. Preheat oven to 220°C (425°F).
  2. In a bowl, mix flour, baking powder, and salt.
  3. Cut in cold butter until crumbly.
  4. Add milk and mix just until dough forms.
  5. Roll out (about 2 cm thick) and cut into rounds.
  6. Bake for 12–15 minutes until golden.

👉 Shortcut: Use canned biscuits and bake according to package.

🍲 3. Prepare the Sausage Gravy

  1. In a skillet, cook sausage over medium heat until browned.
  2. Do NOT drain fat (this builds flavor).
  3. Sprinkle flour over sausage and stir (1–2 minutes).
  4. Slowly add milk while stirring continuously.
  5. Simmer until thick and creamy.
  6. Season with lots of black pepper and salt.

👉 Gravy should be thick but pourable—add milk if too thick.

🍳 4. Fry the Eggs

  1. Heat butter or oil in a pan.
  2. Crack eggs gently into the pan.
  3. Cook sunny-side up or to your liking.
  4. Season with salt and black pepper.

🍽️ 5. Assemble the Plate

  1. Split biscuits in half.
  2. Spoon generous sausage gravy over them.
  3. Add eggs on the side.
  4. Serve with crispy bacon.

💡 Pro Tips for Restaurant-Quality Taste

  • Use whole milk for richer gravy.
  • Add extra black pepper—that’s key to Southern gravy.
  • Don’t overwork biscuit dough (keeps them fluffy).
  • For extra flavor, mix a little bacon grease into the gravy.
