Crispy 5-Ingredient Cauliflower Fritters

Step 1: Cook the Cauliflower

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8–10 minutes, or until fork-tender. Drain well and let cool for a few minutes.

Step 2: Mash the Cauliflower

Transfer the cooked cauliflower to a large bowl. Mash it with a potato masher or fork until mostly smooth, leaving a few small chunks for texture.

Step 3: Mix the Batter

Add the eggs, shredded cheese, flour, salt, and black pepper. If using, stir in the parsley and garlic powder. Mix until everything is well combined and the mixture holds together.

Step 4: Heat the Pan

Heat 2–3 tablespoons of vegetable oil in a large nonstick skillet over medium heat.

Step 5: Form the Fritters

Scoop about 2 tablespoons of the mixture for each fritter and gently flatten into small patties.

Step 6: Fry Until Crispy

Place the patties into the hot skillet, leaving space between them. Cook for 3–4 minutes per side, or until golden brown and crispy. Turn carefully with a spatula.

Step 7: Drain

Transfer the cooked fritters to a plate lined with paper towels to remove excess oil.

Step 8: Serve

Serve warm with your favorite dipping sauce such as sour cream, garlic yogurt sauce, ranch dressing, or spicy mayo. They also pair well with a fresh green salad.

Tips

  • Squeeze out any excess moisture from the cooked cauliflower with a clean kitchen towel for extra crispy fritters.
  • Add grated Parmesan for even more flavor.
  • For a healthier version, bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
  • Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or air fryer to restore their crispiness.
