1. Prepare the cauliflower
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Wash the cauliflower and cut it into bite-sized florets. Pat them dry thoroughly.
2. Make the batter
In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
3. Coat the cauliflower
Add the cauliflower florets to the batter and toss until each piece is evenly coated.
4. Add Parmesan
Sprinkle the Parmesan over the coated cauliflower and gently toss again.
5. Arrange on the tray
Place the florets on the prepared baking sheet in a single layer, leaving a little space between them. Drizzle lightly with olive oil.
6. Bake
Bake for 20–25 minutes, turning the cauliflower halfway through, until golden brown and crispy.
For extra browning, broil for 1–2 minutes at the end, watching carefully.
7. Garnish and serve
Sprinkle with fresh parsley and serve immediately with ranch, garlic sauce, spicy mayo, or your favorite dipping sauce.
