Easy Fresh Orange Muffins

Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease the cups.

In a large mixing bowl, add the eggs and granulated sugar. Beat for about 2–3 minutes until the mixture becomes lighter and slightly creamy. This helps create a soft and fluffy texture.

Slowly add the vegetable oil while continuing to mix. Pour in the fresh orange juice and add the vanilla. Mix until everything is well combined.

Remove the muffins from the oven and let them cool in the pan for about 5 minutes. Transfer them to a wire rack and allow them to cool completely, or enjoy them while they are still slightly warm.
