Fruit Paradise Cake

Step 1: Prepare the Cake Pans

Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt.

Step 3: Cream the Butter and Sugar

In a large mixing bowl, beat the butter and sugar until pale and fluffy, about 3–4 minutes.

Step 4: Add Eggs

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5: Combine the Batter

Gradually add the dry ingredients, alternating with the milk. Mix until just combined. Do not overmix.

Step 6: Bake

Divide the batter evenly between the prepared pans.

Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.

Cool the cakes for 10 minutes before transferring them to a wire rack to cool completely.

Make the Whipped Cream Frosting

Step 7: Whip the Cream

In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.

Refrigerate until ready to use.

Make the White Chocolate Drip

Step 8: Melt the Chocolate

Heat the heavy cream until just simmering.

Pour it over the chopped white chocolate.

Let stand for 2 minutes, then stir until smooth.

Allow it to cool slightly before using.

Assemble the Cake

Step 9: Layer the Cake

Place one cake layer on a serving plate.

Spread a generous layer of whipped cream.

Add the second cake layer.

Step 10: Frost the Cake

Cover the entire cake with whipped cream, smoothing the sides and top with an offset spatula.

Step 11: Add the White Chocolate Drip

Spoon the cooled white chocolate around the edge of the cake, allowing it to drip naturally down the sides.

Spread the remaining chocolate over the top.

Step 12: Decorate with Fruit

Arrange the strawberries, cherries, blueberries, raspberries, blackberries, kiwi slices, mandarin segments, and mint leaves beautifully across the top.

Decorate the sides with a few extra berries if desired.

Sprinkle with sliced almonds or edible flowers for an elegant finish.

Chill

Refrigerate the cake for at least 2 hours before slicing. This helps the frosting set and makes cutting easier.
