1. Prepare the sweet potatoes
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the diced sweet potatoes and season with a little salt and pepper.
Cook for 8–10 minutes, stirring occasionally, until they begin to brown and become tender.
If they’re browning too quickly, add a splash of broth and cover the skillet for a couple of minutes.
2. Cook the onion
Push the sweet potatoes to one side of the skillet.
Add the remaining olive oil and diced onion.
Cook for 3–4 minutes, until softened.
3. Add the turkey
Add the ground turkey to the skillet.
Break it apart with a wooden spoon and cook for 6–8 minutes, until browned and fully cooked.
4. Add the seasonings
Stir in the garlic, smoked paprika, cumin, Italian seasoning, garlic powder, black pepper, and remaining salt.
Cook for about 30–60 seconds, until fragrant.
5. Combine everything
Mix the sweet potatoes and turkey together.
Pour in the broth and cook for another 3–4 minutes, allowing the flavors to blend and the sweet potatoes to become completely tender.
6. Add the greens
Add the chopped kale or spinach.
Stir and cook for 2–4 minutes, until the greens are wilted and tender.
7. Finish with lemon
Turn off the heat and drizzle the lemon juice over the skillet.
Sprinkle with fresh parsley and give everything one final toss.
8. Serve
Serve immediately while hot.
For extra flavor, top with avocado, pumpkin seeds, crumbled feta, or a dollop of plain Greek yogurt.
