Old-Fashioned Peach Cobbler

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the peaches: Add the sliced peaches to a large bowl. Mix in the granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, cornstarch, and salt. Stir gently until the peaches are evenly coated.
  3. Make the batter: In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and vanilla and stir just until combined. Don’t overmix.
  4. Add the butter: Pour the melted butter into a 9×13-inch baking dish.
  5. Add the batter: Pour the batter evenly over the melted butter. Do not stir.
  6. Add the peaches: Carefully spoon the peach mixture over the batter, spreading it out evenly. Again, don’t stir—the layers will come together beautifully while baking.
  7. Bake: Place the dish in the oven and bake for 45–55 minutes, or until the top is golden brown and the peach filling is bubbling around the edges.
  8. Let it rest: Allow the cobbler to cool for about 10–15 minutes so the juices can thicken slightly.
  9. Serve warm: Spoon generous portions into bowls and top with a scoop of vanilla ice cream. 🍑🍨

Tip: If using canned peaches, drain them well and reduce the sugar slightly depending on how sweet they are. Fresh ripe peaches give the best flavor, but frozen peaches work wonderfully too.
