1. Cook the Noodles
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package directions until just tender.
Drain well and set aside. Avoid overcooking the noodles because they will continue cooking in the oven.
2. Brown the Ground Beef
Heat a large skillet over medium heat. Add the ground beef and cook for about 5–7 minutes, breaking it apart with a wooden spoon.
Cook until browned and no longer pink. Drain any excess grease.
3. Add the Vegetables
Add the chopped onion and green bell pepper to the skillet.
Cook for approximately 3–4 minutes, until the vegetables begin to soften. Add the minced garlic and cook for another 30 seconds.
If using mushrooms or diced tomatoes, add them now and cook for another 2–3 minutes.
4. Season the Filling
Stir in the Italian seasoning, garlic powder, salt, and black pepper.
Pour in the pizza sauce and stir everything together. Let the mixture simmer gently for about 3–5 minutes so the flavors can combine.
5. Combine With the Noodles
Add the cooked egg noodles to the skillet.
Gently stir until the noodles are completely coated with the seasoned beef and pizza sauce mixture.
6. Layer the Casserole
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
Spread half of the noodle mixture into the bottom of the dish. Sprinkle with some mozzarella and cheddar cheese, then add a layer of pepperoni.
Add the remaining noodle mixture and spread it evenly.
Top with the remaining mozzarella, cheddar, and Parmesan cheese. Arrange additional pepperoni slices generously over the top.
7. Bake
Cover the casserole loosely with aluminum foil and bake for 20 minutes.
Remove the foil and continue baking for another 10–15 minutes, until the cheese is completely melted and bubbling and the pepperoni edges are slightly crisp.
For an extra golden top, place the casserole under the broiler for 1–2 minutes, watching carefully so it doesn’t burn.
8. Rest and Serve
Remove the casserole from the oven and let it rest for 5–10 minutes before serving.
Cut into portions and serve hot. The result is a cheesy, saucy casserole packed with savory beef, tender noodles, vegetables, melted cheese, and crispy pepperoni—like a comforting homemade pizza transformed into a family-style baked dinner.
