1. Prepare the pistachio coating
Finely chop the pistachios and place them in a shallow bowl. Add the parsley, orange zest, salt, and black pepper. Mix well.
2. Shape the goat cheese
Keep the goat cheese chilled so it is easier to handle. Divide it into 8 equal portions and roll each portion into a ball.
3. Coat the cheese
Roll each goat cheese ball through the pistachio mixture, gently pressing the nuts onto the surface so they stick well.
4. Chill
Place the coated goat cheese bites on a plate and refrigerate for 20–30 minutes. This helps them firm up.
5. Make the orange hot honey
Add the honey, orange juice, orange zest, and red pepper flakes to a small saucepan. Warm over low heat for 1–2 minutes, just until the mixture becomes loose and fragrant. Don’t boil.
6. Assemble
Arrange the chilled goat cheese bites on a serving plate. Drizzle generously with the warm orange hot honey.
7. Garnish
Sprinkle with a few extra chopped pistachios and fresh parsley or mint.
