Slow Cooker Scottish Beef Stew

  1. Pat the beef dry with paper towels.
  2. Season with salt and black pepper.
  3. Toss the beef with the flour until evenly coated.

Step 2: Brown the Beef

  1. Heat the oil in a large skillet over medium-high heat.
  2. Brown the beef in batches for 2–3 minutes per side until nicely caramelized.
  3. Transfer the browned beef to the slow cooker.

Browning isn’t essential, but it adds extra richness to the finished stew.

Step 3: Add the Vegetables

Place the chopped onion, carrots, turnips (or swede), celery, and crushed garlic into the slow cooker with the beef.

Step 4: Prepare the Cooking Liquid

In a measuring jug, combine:

  • Beef stock
  • Scotch whisky (if using)
  • Tomato purée
  • Worcestershire sauce (optional)

Whisk until smooth, then pour over the beef and vegetables.

Add the bay leaves and dried thyme.

Step 5: Slow Cook

  • Low: Cook for 8 hours
  • High: Cook for 4–5 hours

The beef should be tender enough to cut with a spoon, and the vegetables should be perfectly cooked.

Step 6: Thicken the Stew (Optional)

For a richer gravy:

  1. Stir together the cornstarch and cold water until smooth.
  2. Add the mixture to the slow cooker during the last 20–30 minutes of cooking.
  3. Cook on High until the stew thickens.

Step 7: Serve

  1. Remove the bay leaves before serving.
  2. Taste and adjust the seasoning with additional salt and pepper if needed.
  3. Garnish with fresh parsley or thyme.

Serve with:

  • Creamy mashed potatoes
  • Buttered crusty bread
  • Traditional Scottish oatcakes
  • Steamed green vegetables
  • Buttered peas

Tips for the Best Scottish Beef Stew

  • Beef chuck or stewing beef is ideal because it becomes wonderfully tender during slow cooking.
  • The Scotch whisky adds a subtle smoky depth but can be omitted if preferred.
  • Root vegetables like swede and turnips give the stew its traditional Scottish character.
  • The stew tastes even better the next day after the flavors have had time to develop.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
