Ingredients
• ½ cup red chillies
• ½ cup water
• ½ cup white sugar
• 1 tsp fish sauce
• ½ cup white vinegar
• 2 tbsp minced garlic
• 1 tsp salt
• 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
1. Remove the chilli seeds for a milder sauce, if desired.
2. Finely chop or blend the chillies.
3. Combine the vinegar, water, sugar, fish sauce, garlic, and chillies in a saucepan.
4. Bring to a boil, stirring until the sugar dissolves.
5. Stir in the cornstarch slurry and simmer for 1–2 minutes until thickened.
6. Let the sauce cool completely and store in a clean jar.
