Best Honey Jerk Lamb Chops

1. Prepare the Lamb Chops

Pat the lamb chops dry with paper towels. Trim any excess fat if desired, but leave a little fat for extra flavor and tenderness.

Place the lamb chops in a large bowl or resealable food bag.

2. Make the Jerk Marinade

Add the jerk marinade, Caribbean jerk marinade if using, olive oil, garlic purée, ginger, Cajun seasoning, and Red Jalapeño Garlic seasoning.

Mix thoroughly until everything is combined.

Add the lamb chops and massage the marinade into the meat, making sure every chop is well coated.

3. Marinate

Cover the bowl or seal the bag and refrigerate for at least 30 minutes.

For deeper flavor, marinate for 4–8 hours. Before cooking, allow the lamb to sit at room temperature for about 15–20 minutes.

4. Prepare the Honey Glaze

Place the honey in a small bowl.

If it is very thick, warm it slightly so it becomes easier to brush over the lamb.

For an extra spicy-sweet glaze, mix a small spoonful of the jerk marinade into the honey only if that marinade has not touched the raw lamb. Otherwise, use fresh seasoning or hot sauce instead.

5. Sear the Lamb Chops

Heat a large heavy skillet or grill pan over medium-high heat.

Lightly coat it with a little olive oil.

Remove excess marinade from the lamb chops and place them in the hot pan without overcrowding.

Sear for approximately 3–5 minutes per side, depending on thickness and your preferred doneness.

6. Add the Honey Glaze

During the final minute or two of cooking, brush the lamb chops generously with honey.

Flip them briefly and brush the other side.

Allow the honey to caramelize slightly, watching carefully because honey can burn quickly.

7. Check for Doneness

Use a meat thermometer inserted into the thickest part of the chop, away from the bone.

For food safety, lamb chops should reach at least 145°F (63°C), followed by a 3-minute rest.

8. Rest and Serve

Transfer the lamb chops to a serving platter and let them rest for about 3–5 minutes.

Brush with a little more honey glaze and sprinkle with fresh chopped parsley.

Serve hot with rice and peas, roasted vegetables, fried plantains, mashed potatoes, or a fresh Caribbean-style salad.

The finished lamb chops should have a deeply caramelized, slightly crispy exterior with juicy, tender meat inside and a delicious balance of sweet honey, spicy jerk seasoning, garlic, ginger, and smoky Cajun flavor.
