Classic Salisbury Steak Meatballs with Homemade Brown Gravy

In a large mixing bowl, combine:

  • Ground beef
  • Breadcrumbs
  • Eggs
  • Onion
  • Green onions
  • Garlic
  • Worcestershire sauce
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper
  • Parsley

Mix gently until everything is evenly combined. Avoid overmixing to keep the meatballs tender.

Step 2: Shape the Meatballs

Using your hands or a cookie scoop, roll the mixture into balls about 2 inches (5 cm) in diameter.

Arrange them on a parchment-lined or lightly greased baking sheet.

Step 3: Bake

Preheat the oven to 400°F (200°C).

Bake the meatballs for 20–25 minutes, or until browned and cooked through with an internal temperature of 160°F (71°C).

Step 4: Make the Brown Gravy

While the meatballs are baking:

  1. Melt the butter in a saucepan over medium heat.
  2. Whisk in the flour and cook for 1–2 minutes until lightly golden.
  3. Slowly whisk in the beef broth until smooth.
  4. Add the Worcestershire sauce, Dijon mustard, onion powder, garlic powder, salt, and pepper.
  5. Simmer for 5–7 minutes, stirring often, until the gravy thickens.

Step 5: Combine

Transfer the baked meatballs to the saucepan with the gravy.

Gently spoon the gravy over each meatball and simmer for another 5 minutes so the flavors blend together.

Step 6: Serve

Serve the meatballs hot with plenty of gravy over:

  • Creamy mashed potatoes
  • Buttered egg noodles
  • Steamed white rice
  • Roasted vegetables
  • Homemade biscuits

Garnish with chopped parsley or sliced green onions if desired.

Storage Tips

  • Refrigerate leftovers in an airtight container for up to 4 days.
  • Freeze cooked meatballs and gravy for up to 3 months.
  • Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy becomes too thick.

Tips for Success

  • Use 80/20 ground beef for the juiciest meatballs.
  • Finely dice the onions so they cook evenly.
  • Don’t overwork the meat mixture to keep the meatballs tender.
  • Simmer the meatballs in the gravy for a few minutes before serving for even more flavor.

This comforting classic is one of those recipes that never goes out of style. Rich, savory, and incredibly satisfying, it’s a meal the whole family will ask for again and again.
