- Prepare the beef: Cut the dried chipped beef into small strips. If it’s very salty, rinse it briefly under cold water, then pat it dry.
- Toast the bread: Toast the bread until golden and crisp. Set aside.
- Cook the beef: Melt 2 tablespoons of butter in a large skillet over medium heat. Add the chipped beef and cook for about 2–3 minutes, stirring occasionally.
- Make the roux: Add the remaining 2 tablespoons of butter. Once melted, sprinkle in the flour and stir constantly for about 1–2 minutes.
- Add the milk: Slowly pour in the milk while whisking continuously. Add the half-and-half or cream and continue stirring until the sauce becomes smooth and thick.
- Season: Stir in the black pepper, garlic powder, onion powder, and nutmeg if using. Taste before adding salt because chipped beef can already be quite salty.
- Simmer: Reduce the heat to low and simmer for 3–5 minutes, stirring frequently, until the gravy reaches a creamy consistency.
- Serve: Place the toasted bread on plates and spoon a generous amount of creamed chipped beef and gravy over each slice.
- Finish: Sprinkle with a little fresh parsley and cracked black pepper if desired.
🍳 Serving Tip
For the best texture, use thick, crispy toast so it can hold up to the creamy gravy without becoming completely soggy. Some people also enjoy serving the creamed beef over biscuits, potatoes, or noodles instead of toast.
