Slow Cooker Foil-Wrapped Tender Pork Roast

1. Season the pork
Pat the pork dry with paper towels. Season both sides generously with salt, black pepper, and Italian seasoning.

2. Prepare the foil
Place a large sheet of heavy-duty aluminum foil on your work surface. Put one piece of pork in the center.

3. Add the butter and garlic
Spread half of the minced garlic over the pork and place 2 tablespoons of butter on top. Wrap the foil tightly around the meat, sealing the edges well so the juices stay inside.

Repeat with the second piece of pork.

4. Place in the slow cooker
Put the foil packets into the slow cooker. You can place them directly in the cooker without adding much liquid because the pork will release its own juices as it cooks.

5. Slow cook
Cover and cook on LOW for approximately 4–6 hours, depending on the thickness of the pork.

Avoid cooking significantly longer than necessary, as lean pork can become dry even in a slow cooker.

6. Check for doneness
Use a meat thermometer to check the thickest part of the pork. Pork should reach at least 145°F (63°C), followed by a short rest.

7. Rest the meat
Carefully open the foil packets—the steam and juices will be very hot. Let the pork rest for about 5–10 minutes.

8. Serve
Spoon the buttery garlic juices over the pork and serve with mashed potatoes, roasted vegetables, rice, or a fresh salad.

❤️ Tip for Extra Flavor

For a beautiful golden finish, carefully remove the pork from the foil after cooking and place it under a hot broiler or in a hot skillet for 1–2 minutes per side.
