Slow Cooker Irish Beef Stew

This hearty Irish Beef Stew is packed with tender beef, potatoes, carrots, and celery, all simmered in a rich Guinness and beef broth. It’s the ultimate comfort food for chilly days and tastes even better the next day.

Ingredients

  • 750 g (1½ lb) beef chuck, cut into 1-inch cubes
  • 2 tablespoons plain (all-purpose) flour
  • 3 carrots, peeled and cut into chunks
  • 2 celery stalks, sliced
  • 1 large onion, chopped
  • 3 medium potatoes, peeled and cut into chunks
  • 2 garlic cloves, crushed
  • 500 ml (2 cups) beef stock
  • 200 ml (¾ cup) Guinness stout
  • 2 tablespoons tomato purée (tomato paste)
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 4–5 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste

Optional

  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for a thicker stew)
  • Fresh parsley for garnish
