Slow Cooker Irish Beef Stew

  1. Pat the beef cubes dry with paper towels.
  2. Season with salt and pepper.
  3. Sprinkle the flour over the beef and toss until every piece is lightly coated.

Step 2: Brown the Beef

  1. Heat a large skillet over medium-high heat.
  2. Add a drizzle of oil if needed.
  3. Brown the beef in batches for 2–3 minutes per side.
  4. Transfer the browned beef to the slow cooker.

This step adds extra depth of flavor but can be skipped if you’re short on time.

Step 3: Add the Vegetables

Place the carrots, celery, onion, potatoes, and crushed garlic into the slow cooker with the beef.

Step 4: Prepare the Stew Base

In a bowl or measuring jug, whisk together:

  • Beef stock
  • Guinness
  • Tomato purée
  • Worcestershire sauce

Pour the mixture over the beef and vegetables.

Add the bay leaves and fresh thyme.

Step 5: Slow Cook

  • Low: Cook for 8 hours
  • High: Cook for 4–5 hours

The beef should be incredibly tender, and the vegetables should be soft without falling apart.

Step 6: Thicken the Stew (Optional)

If you’d like a thicker stew:

  1. Mix the cornstarch with the cold water.
  2. Stir it into the slow cooker during the last 20–30 minutes of cooking.
  3. Cook on High until the stew thickens.

Step 7: Serve

  1. Remove the bay leaves and thyme stems.
  2. Taste and adjust the seasoning with additional salt and pepper if needed.
  3. Garnish with chopped fresh parsley.

Serve hot with:

  • Crusty Irish soda bread
  • Buttered rolls
  • Creamy mashed potatoes
  • Steamed green vegetables
